Valentine’s Recipe: Berry Salad with Grilled Chilli Squeaky Cheese®

Ingredients (Serves 2)

  • 1 pack Yorkshire Dama Chilli Squeaky Cheese®, sliced into 1–1.5cm pieces

  • 2 cups fresh rocket or mixed leaves

  • ½ cup strawberries, halved

  • ½ cup blueberries

  • ½ cup raspberries

  • 2 tbsp pomegranate seeds (optional)

  • 1 tbsp olive oil

  • 1 tsp honey (optional)

  • Fresh basil or mint, to garnish

  • Salt and cracked black pepper, to taste

Method

  1. Preheat a grill pan or frying pan to medium-high heat. Lightly brush with oil.

  2. Grill the slices of Chilli Squeaky Cheese® for 1.5–2 minutes per side, until golden with light char marks. Set aside.

  3. Arrange the rocket, berries, and pomegranate seeds on a serving plate or shallow bowl.

  4. Place the grilled cheese slices on top while still warm.

  5. Drizzle with olive oil and honey (if using). Season lightly with salt and black pepper.

  6. Finish with fresh herbs and serve immediately.
