Keto-Friendly Recipe: Sausage & Squeaky Cheese® Bake

This comforting, low-carb dish is ready in around 30 minutes and is perfect for a warming lunch or dinner.

Ingredients

  • 1 medium onion, diced

  • 4 sausages (high meat content, >85%, and less than 3g carbs per 100g)

  • 3 medium courgettes, cubed

  • 4 medium tomatoes, chopped

  • 1½ tsp turmeric

  • 1½ tsp ground cumin

  • 1 tsp paprika

  • 1 tsp cayenne pepper

  • 1 pack Squeaky Cheese®, sliced

  • Salt and black pepper, to taste

  • Fresh basil (optional)

Method

  1. Heat a little oil in a large frying pan over medium-high heat. Add the onion and sausages (cut into roughly 2cm pieces). Cook until the onion softens and the sausages begin to brown.

  2. Add the courgettes and tomatoes. Cook for 2–3 minutes.

  3. Stir in the spices and reduce the heat. Simmer for 15–20 minutes until the sauce thickens and the courgettes are tender. Season to taste.

  4. Preheat the grill to high. Transfer the mixture to an ovenproof dish and top with sliced Squeaky Cheese®.

  5. Grill for 5–10 minutes, until the cheese turns golden on top.

  6. Finish with fresh basil and serve warm.
