Ingredients

  • 1 pack Rosemary Squeaky Cheese (220g)
  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 250g white mushrooms, sliced
  • 2 garlic cloves, minced
  • 200ml double cream
  • Salt and black pepper to taste
  • Fresh rosemary to garnish

Method

1. Prepare the Chicken

Using a sharp knife, carefully slice a pocket into each chicken breast without cutting all the way through.

2. Stuff with Rosemary Squeaky Cheese

Slice the Rosemary Squeaky Cheese into thick strips and place inside each chicken breast. Secure with cocktail sticks if needed.

3. Sear Until Golden

Heat olive oil in a frying pan over medium heat. Sear the stuffed chicken breasts for 4–5 minutes on each side until golden brown.

4. Finish in the Oven

Transfer the chicken to a preheated oven at 180°C and bake for 12–15 minutes until fully cooked through and the cheese inside is soft.

5. Cook the Mushrooms

In the same frying pan, melt the butter and sauté the garlic and sliced mushrooms until softened and lightly golden.

6. Make the Creamy Mushroom Sauce

Pour in the double cream and season with salt and black pepper. Simmer gently for 3–4 minutes until the sauce thickens slightly.

7. Serve

Place the stuffed chicken breast onto a plate and spoon over the creamy mushroom sauce. Garnish with fresh rosemary.
