Halloumi Original: The History of Halloumi Cheese

The History of Halloumi & the Rise of Squeaky Cheese — A Middle Eastern Legacy Reimagined in Yorkshire

At Yorkshire Dama Cheese (YDC), our signature Squeaky Cheese is inspired by one of the world’s most fascinating and ancient dairy traditions — Halloumi-style cheese, a product rooted in Middle Eastern heritage and shaped by centuries of nomadic life, trade, and innovation.

This unique cheese is best known for its distinctive “squeak” when bitten, a texture created by its firm, layered protein structure — a feature cherished by food lovers across cultures.

Ancient Origins: A Cheese Born of Survival

Halloumi-style cheese traces its earliest roots to the Bedouin communities of the Middle East, particularly in regions now known as Iraq, Syria, and Jordan, where sheep and goats were the primary source of milk.

In hot desert climates, fresh milk spoiled quickly. To preserve it, nomadic communities developed a method of pressing, salting, and storing cheese in brine, creating a long-lasting, protein-rich food that could survive long journeys across arid landscapes. This process gave rise to a tough, salty, and resilient cheese — ideal for travel, trade, and daily nourishment.

The Birth of Cheesemaking

Historical evidence suggests that as early as 4000 BCE, early societies discovered cheesemaking accidentally. Milk stored in containers made from animal stomachs naturally curdled due to residual rennet enzymes. Over time, this accidental process became a deliberate technique — with milk curdled, pressed, salted, and preserved in brine.

Ancient traders introduced this cheese across the Middle East, North Africa, and the Mediterranean, including Greece and Cyprus, where it evolved into what the world now widely recognizes as Halloumi.

The Meaning Behind the Name “Halloumi”

Linguistically, the name reflects its deep cultural roots:

  • In Arabic, Halum (حلوم) refers to thickened milk or yogurt-like curds.

  • In ancient Coptic Egyptian, Aloum or Alum simply meant cheese.

These meanings highlight how central this cheese was to everyday life in ancient civilizations.

From Tradition to Global Favourite

Over centuries, Halloumi-style cheese gained worldwide popularity thanks to its unique cooking properties. Unlike most cheeses, it doesn’t melt when heated — making it perfect for:

  •  Grilling & BBQ

  • Salads

  •  Pan-frying

  •  Baking & wraps

Its firm, springy texture is also what creates that famous “squeak” — now a hallmark of premium squeaky cheese.
